Brussels sprouts crisp up beautifully in an air fryer – the outer leaves caramelising to golden shards. Tossing anything in ’nduja is a good idea, but it works particularly well here, creating a sweet, fiery, salty side.
Bring a pan of salted water to the boil. Add the sprouts and cook for 4-5 minutes. You want them still to be a little firm as they will cook further in the next step. Drain and set aside, returning the pan to the heat. Add the ’nduja and gently cook until melted. Return the sprouts to the pan and toss to coat.
Heat the air fryer to 200ºC. Add the sprouts and cook for 8-10 minutes, shaking them halfway through. Serve sprinkled with a little salt.
