Air fryer tahini apple crumble

Classic apple crumble is quick to cook in an air fryer. We’ve added tahini, sesame seeds and lemon for an intriguing upgrade.

Ingredients :
  • 2 bramley apples (about 700g), peeled, cored and cut into eighths – see Don’t Waste It (above)
  • 30g demerara sugar, plus 2 tbsp
  • ½ tsp ground cinnamon
  • ¼ tsp ground ginger
  • Finely grated zest and juice ½ lemon
  • 50g unsalted butter, chilled and chopped
  • 100g plain flour
  • 20g tahini
  • 10g sesame seeds (a mixture of black and white), plus an extra sprinkle to serve
  • Cream, custard or ice cream to serve
Directions :
  1. Put the apples, 2 tbsp sugar, half the cinnamon, the ginger, lemon zest and juice, a pinch of salt and 1 tbsp water in a pan over a medium heat. Cover with a lid and cook for 6-12 minutes until the apples are as soft as you want them to be – either soft with a little fluffy sauce around them but keeping some shape, or completely collapsed into a purée.

  2. Meanwhile, rub the butter into the flour until it resembles chunky breadcrumbs. Stir in the 30g sugar, the remaining cinnamon and a pinch of salt, then the tahini and sesame seeds.

  3. Heat the air fryer to 180°C. Transfer the apple mixture to a baking dish that will fit inside your air fryer (or several – see Scale It Up, above). Top with the crumble mix, then cook for 10-12 minutes until golden brown on top. Serve with cream, custard or ice cream and a sprinkling of sesame seeds.
