Apple Balsamic Chicken recipe

Fork tender chicken breasts in a rich sweet sauce with less than 10 minutes of prep! Serve over noodles, rice or mashed potatoes.

Ingredients :
  • 1 cup apple jelly
  • 1/2 cup apple juice
  • 1/2 cup water
  • 1/4 cup balsamic vinegar
  • 1 chicken bouillon cube (or 1 teaspoon ground bouillon)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon coarse salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground black pepper
  • 4 chicken breasts boneless, skinless
  • 2 tablespoons unsalted butter
  • 2 tablespoons cornstarch
  • Cooked rice, egg noodles or mashed potatoes , for serving
  • Fresh parsley , coarsely chopped, optional
Directions :
  1. In your slow cooker bowl, whisk together the apple jelly, apple juice, water, balsamic vinegar, chicken bouillon, garlic power, salt, thyme, paprika and pepper. Add the chicken breasts, turning once to coat.

  2. Set the slow cooker to high for 3 hours and place the lid on tight.

  3. Open and skim the top for fat.

  4. Melt the butter in a small bowl, then whisk in the cornstarch. Stir into slow cooker mixture to thicken the sauce. Continue cooking on low for 15 minutes, or until sauce has thickened.

  5. Serve over mashed potatoes, rice or noodles and garnish with parsley, if desired.
