A salty/sweet combo of blackberry jam & prosciutto rest atop whipped ricotta cheese and topped with fresh basil and just a drizzle of honey.
A salty/sweet combo of blackberry jam & prosciutto rest atop whipped ricotta cheese and topped with fresh basil and just a drizzle of honey.
Lightly butter toast on both sides, then toast in a skillet until lightly golden brown on both sides, about 1-2 minutes per side. Set aside to cool slightly.
Add ricotta cheese to a medium bowl and whisk until smooth (I like using my Braun MultiQuick with Whisk attachment for this!). Divide whipped ricotta among 3 slices of toast and spread evenly.
Add blackberry jam on top of whipped ricotta. If the jam is not very spreadable coming out of the jar, you can break it up with a spoon or whisk in a bit of water so it can spread easily over top of the ricotta.
Layer the prosciutto on top of the blackberry jam, then top with fresh basil.
Optional: Add fresh blackberries and a drizzle of honey before serving.
