  • 1-2 pounds salmon , cut into 4 individual filets
  • 1/4 cup Dijon mustard
  • 3 cloves garlic , minced
  • 1 tablespoon shallot , finely minced
  • 2 teaspoon lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon coarse kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon smoked paprika
  • 4 tablespoons hot honey , such as Mike’s or homemade

  • 1 teaspoon dried Italian seasoning
  • 4 cups mixed green lettuces
  • 4 tablespoons goat cheese crumbles
  • 1/2 cup grape tomatoes , cut in half
  • 1 fresh lemon , quartered
  • flakey sea salt and freshly ground pepper
Directions :
  1. Preheat the oven to 400°F and line a rimmed baking sheet with parchment paper. Place all four salmon filets onto the parchment, making sure there is space between each. Set aside.

  3. Evenly slather the mixture over the salmon filets.

  4. Bake for 8-10 minutes, depending on the thickness of your filets and desired level of doneness.

  5. Remove and allow to sit rest for 4-5 minutes. Drizzle each filet with 1 tablespoons of the hot honey and serve.
