Mexican Salad

This Mexican salad is one of my favorite side dishes and it comes together so quickly! With lots of veggies and a vibrant, citrusy dressing, you can’t go wrong serving this on a weeknight as well as at a party.

Ingredients :
  • 1 head of romaine lettuce , chopped
  • 1 can of black beans , drained and rinsed
  • 1 can of corn , drained
  • 1 avocado , diced
  • 1 red bell pepper , diced
  • 1 jalapeño pepper , seeded and diced
  • 1/2 cup cilantro , chopped
  • 1 cup cherry tomatoes , halved
  • 5 oz Queso Fresco , crumbled
  • 1 lime , juiced
  • 1/4 cup olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
Directions :
  1. In a small mixing bowl, whisk together lime juice, olive oil, cumin, chili powder, salt, and pepper until well combined.

  2. Salad:

  3. In a large mixing bowl, combine chopped romaine lettuce, drained and rinsed black beans, drained corn, diced avocado, diced red bell pepper, diced jalapeño pepper, chopped cilantro, cherry tomatoes and the crumbled queso fresco

  4. Pour the dressing over the salad and toss until all ingredients are evenly coated.

  5. Serve and enjoy!
