Protein Baked Oats

These viral Tik Tok baked oats are a little like a lava cake inside. Chocolate, marshmallow, and summer vibes here!

Ingredients :
  • 1 cup oat flour, (120 grams)
  • 1/2 scoop Dymatize Elite Vanilla Casein Protein Powder, (17 grams)
  • 1/2 scoop Optimum Nutrition Gold Standard Whey Protein Powder, Double Rich Chocolate, (15 grams)
  • 2 tbsp dark chocolate chunks, (28 grams)
  • 1 1/2 tbsp Dutch cocoa powder, (9 grams)
  • 1 tsp baking powder
  • pinch of salt
  • 2/3 cup unsweetened vanilla almond milk, (5.3 fl oz)
  • 2 large eggs, (100 grams)
  • 1 tbsp maple syrup, (21 grams)
  • 1 tsp vanilla extract
  • 6 tbsp Marshmallow Fluff, (36 grams)
Directions :
  1. Pre-heat oven to 350°. Spray the inside of 3 half quart (about 8 fl oz capacity) baking dishes with non-stick cooking spray. Set aside.

  2. In a medium bowl, whisk together oat flour, protein powder, baking powder, cocoa powder, and salt until well combined. Set aside.

  3. In another bowl, whisk together milk, eggs, maple syrup, and vanilla extract. Pour into bowl with dry ingredients and mix until completely incorporated and not dry flour remains visible. The batter should be thick and sticky. Fold in chocolate chunks.

  4. Add the batter to the prepared baking dish and spread out with a spatula to make an even layer that reaches the edges.

  5. Bake for 18-20 minutes. They should puff up and begin to brown lightly on top, and touching it should not leave a mark. Set aside on a cooling rack.

  6. Top slightly cooled oats with a dollop of marshmallow creme and crushed graham crackers (if desired) before serving.
