Slow Cooker Beef and Broccoli

This easy beef and broccoli recipe only takes 10 minutes of prep time from the fridge to the slow cooker! Better than take-out and I bet you’ll agree.

  • 2-3 pounds chuck roast beef , fat trimmed
  • 1 white onion , sliced
  • 2 cups low-sodium beef broth
  • 1 cup low-sodium soy sauce
  • 2/3 cup light brown sugar
  • 2 tablespoons sesame oil
  • 1 tablespoon apple cider vinegar
  • 3-4 teaspoons garlic , minced
  • 3-4 teaspoons fresh ginger , grated
  • 12 ounces bag frozen broccoli florets*
  • 1 tablespoon sesame seeds , toasted and optional
  • 4 tablespoons cornstarch
  • 1/4 cup scallions , sliced for garnish
  • 4 cups Rice
Directions :
  1. Slice the beef into 1/2 inch strips against the grain.

  2. Place the in slow cooker along with the onion, beef broth, soy sauce, brown sugar, oil, vinegar, garlic and ginger . Give it a quick a stir.

  3. Place on high heat for 3 hours.

  4. Add the frozen broccoli. Spoon out 1/2 cup of liquid and whisk with the cornstarch, return to the sauce to thicken. Continue to cook for 15 minutes on low heat.

  5. Serve over preferred rice and garnish with sesame seeds and scallions, if desired.
