Slow Cooker Italian Beef Hoagies is pot roast cooked in pepperoncini chiles until fork tender, then smothered in cheese and serve on a hoagie roll. Great for parties too!
Add the beef roast to the slow cooker. Top with with pepperoncinis (with juice), beef stock, garlic, Italian seasoning, salt and pepper. Cover and set for 4 hours on high or 8 hours on low.
Before serving, shred the beef with two forks and return to the slow cooker to soak up the juices.
Toast the sub rolls and then add two slices Swiss cheese to each. Top with the shredded beef, pepperoncini and giardiniera.
