Slow Cooker Moroccan Spiced Pork Stew

A Moroccan spiced pork stew is the perfect winter comfort food. With a few ingredients and your slow cooker, you can have a hearty dinner ready to warm you on the coldest nights.

Ingredients :
  • 1 Smithfield Applewood Smoked Bacon Marinated Fresh Pork Loin Filet, cut into cubes
  • 1 onion, sliced
  • 2 cups baby carrots
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • 1 15oz can chickpeas, drained
  • 1 1/2 cups chicken broth
  • 1/2 cup dried cherries
  • 1 Meyer lemon
Directions :
  1. Add pork cubes, onion, and carrots to slow cooker.

  2. In a small bowl, mix together cumin, coriander, turmeric, paprika, salt, and cinnamon. Spinkle over pork and vegetables.

  3. Stir in chickpeas and chicken broth.

  4. Turn slow cooker on low and cook for 4-6 hours.

  5. Stir in cherries and cook for an additional 15 minutes. Serve with lemon slices.
